What you mention about about the pigs is significant. The Creole pigs were smaller, so the large farming families outside the Capitol would not have had to worry too much about storing leftovers.</description>

		<description>When we were in Haiti, the pigs pretty much looked like you described, but we were told they were not popular as a food source. Neither were cows. 

There being, for all practical purposes, no refrigeration there, outside the big cities, the rural folks didn&#039;t raise cattle or hogs for food, as they&#039;d have to eat the whole thing pretty much right away. With chickens, that wasn&#039;t a problem, but not with cows &amp; pigs.

Result: beef &amp; pork were cheap, chicken was expensive.</description>
